We all grumble that riding is limited during Northwest winters, but I admit that I enjoy spending a relaxed day inside when the weather is cold and wet outside. As a connoisseur of all things chocolate, one of my special treats is a small mug of healthy Cinnamon Spice Hot Chocolate. I prefer a stovetop variety that uses a few simple ingredients as opposed to the highly processed packets of instant cocoa. The sweet cinnamon, earthy nutmeg and rich chocolate not only taste wonderful, but they also provide a lovely aromatic scent that adds a cozy ambiance to your home.

CINNAMON SPICE HOT CHOCOLATE
Servings: 2
INGREDIENTS
- 2 C unsweetened almond milk
- 2 t unsweetened cocoa powder
- ¼ t ground cinnamon
- ¼ t ground nutmeg
- 1 t pure vanilla extract
- 2 T pure maple syrup
- 20 g, 70% Cocoa Dark Chocolate Bar, melted (I use 2 squares of Lindt 70% Cocoa Excellence Intense Dark Chocolate Bar)
INSTRUCTIONS:
1. In a medium saucepan, heat milk over medium low heat until steam starts to rise from the surface. Add cocoa, cinnamon, nutmeg, vanilla, syrup, and melted chocolate and stir well.
2. Warm over medium low heat until all ingredients are combined and hot chocolate is to desired temp. Add vanilla and stir. Let simmer for 5 minutes.
3. Place in individual cups. Whip with a hand held frother (optional).
4. Serve warm with a dusting of cinnamon.
